Paired with: 2024 Estate Riesling First Course: Ancho chile–rubbed halibut, baked and served over esquites (street corn salad), drizzled with ancho-infused olive oil and finished with light chili-dusted Reggiano crisps and minced chives. Paired with: 2024 Estate Viognier Second Course: Cider-brined pork belly, blackened and hot smoked, served over fresh pasta tossed with a light San Marzano tomato sauce with sliced roasted garlic, fresh cracked black pepper, and grated Parmigiano Reggiano, served with grilled crostini. Paired with: 2023 Estate Grenache Third Course: Sliced beef short rib, marinated, braised, and cold smoked with applewood smoke, served over vegetable-infused risotto (carrot, spring pea, seasonal mushroom, blistered cherry tomato), drizzled with chive oil and finished with shaved pecorino, micro herbs, and smoked sea salt.
