About this event

Most kombucha classes teach you what kombucha is and how to brew it. This workshop also explores why it works! Join microbiome researcher and founder of The Living Food Initiative, Ky Guse, PhD, for an interactive introduction to the fascinating microbial ecosystem that transforms sweet tea into kombucha. Together, we’ll explore the bacteria and yeast that make up the SCOBY, how these microorganisms work together, and how changes in temperature, ingredients and time influence fermentation. Whether you are completely new to kombucha or have been brewing at home for years, this workshop will help you understand fermentation through the lens of ecology and microbiome science. Along the way, we’ll separate common myths from current research, discuss what we know (and don’t know) about kombucha, health, and of course, you’ll leave with the knowledge and confidence to start your own brew at home.
